Spicy Baked Salmon

This salmon recipe is one of my favorites and it’s so easy to make. And it only requires simple ingredients.

  • 1 1/3 lb salmon
  • 1 tbsp brown sugar (I use Organic Vanilla Coconut Sugar)
  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp chili powder
  • 1 medium lime zest & 1 tbsp juice
  • 1 tbsp extra virgin olive oil
  • 3 tbsp chopped cilantro
  • Heat the oven to 375 degrees F. Remove the salmon from the refrigerator and let it sit at room temperature while you prepare. Line a large baking sheet with aluminum foil and lightly coat the foil with nonstick spray. Pat the salmon, lightly with a paper towel to dry and place on baking sheet.
  • In a small bowl stir the brown sugar, salt, chili powder, and lime zest together. In another small bowl mix the lime juice and olive oil and brush the salmon. Sprinkle the seasoning mixture on top of the salmon and evenly rub until all areas are covered.
  • Use another sheet of aluminum foil and cover the top and fold the edges under. Bake the salmon for 14 to 16 minutes, until the salmon is almost completely cooked (times may vary depending on the thickness). Remove the salmon from the oven and take off the top layer of foil. *Add slices of lime on top if desired* Place salmon back into oven on broil setting for about 3 minutes–until the salmon is cooked through.
  • If the salmon needs to be cooked longer, you can add the top foil back on and bake for more time. Make sure to closely watch so it doesn’t over cook.
  • Serve the salmon into portions. Sprinkle cilantro and extra lime juice. Enjoy!
